Time After Time
So if you're anything like me, you find yourself scratching your head and realizing that you've made the same things for dinner several weeks or months in a row, and you're in desperate need for something different yet palatable and appealing for the whole family (well, in my case, most of the family, as Trey will not eat anything except PB&J, chicken nuggets, cheese pizza, and plain cheese burgers).
Pinterest has been a great tool for me in finding new dinner ideas. Some have worked well; others have not. The Chicken Cajun Pasta I have pinned on my Recipes to Try board http://pinterest.com/egrant1899/recipes-to-try/ was very tasty. I had suggested to my sister that substituting some of the peppers for some fresh spinach might be good. She tried it and loved it. So I will definitely make that adjustment next time too.

However, as I was searching for dinner ideas the other day, I came across the "slow cooker freezer" concept. I must admit I felt like a moron for never thinking of the concept before. To save time, especially once the school semester gets hectic, I spend Sunday afternoons cooking meals for the week. Never had it crossed my mind to put together--uncooked--meals to freeze and then thaw and cook in the crock-pot. So I determined I must try it, and try it I did.
My next post will provide more detail on the process and the first experimental dish.
